Gud Til Papdi Recipe: Make thin roti-like and crispy papad-like chikki with sesame and jaggery, chef's recipe

While it may seem a little difficult to make, it's not that difficult. You can easily make sesame papdi at home. All you need is a little patience. It's as crunchy as it is quick to melt in your mouth, making it suitable for everyone from children to the elderly.

Sesame and jaggery are nutrient rich
According to the US Department of Agriculture , 100 grams of sesame seeds contain 20.4 grams of protein. It's also a good source of fiber. Sesame seeds also contain iron, phosphorus, potassium, zinc, copper, manganese, selenium, some B complex vitamins, a small amount of vitamin A, and 1.68 mg of vitamin E per 100 grams.

Ingredients for Jaggery Sesame Papdi
To make jaggery sesame papad, you will need one-fourth cup sesame seeds, one teaspoon desi ghee, one-fourth cup jaggery (crushed or powdered) i.e. equal quantity to sesame seeds, apart from this you will need some pistachios for garnishing.
Jaggery Sesame Papdi Recipe
- First of all, dry roast the sesame seeds in a thick bottom pan so that the rawness goes away and crunchiness comes.
- Toast the sesame seeds in a pan until they turn light golden. Keep the heat low and stir constantly.
- Once the sesame seeds are roasted, remove them to a plate and let them cool. Leaving them in the hot pan can cause the sesame seeds to burn on the bottom.
- After the sesame seeds are roasted, the next step is to melt the jaggery. Melt ghee in a pan and add the jaggery.
- Cook the jaggery on low to medium flame for 5 minutes until it melts completely.
- Cook the jaggery till it starts bubbling and then take water in a bowl and drop a few drops of jaggery in it, if it becomes like candy then understand that the jaggery is ready.
- After the jaggery is cooked, immediately add roasted sesame seeds to it and stir well with a ladle so that a fine mixture is prepared.
- Now you have to grease a little ghee on a silicone mat or parchment paper, spread the mixture on half of it and spread finely chopped pistachios on top of it.
- Turn the remaining piece of paper over the mixture and quickly roll it out with a rolling pin into a thin crust, about the thickness of a roti.
- After this, remove the paper and let the papdi air out a little. This way, your crunchy sesame papdi will be ready.

Grease a silicone mat or parchment paper and keep it ready. Store the sesame papdi in an airtight container by placing it between the parchment paper sheets, which will keep it crunchy.
